Ingredients
- 3 medium to large zucchini
- 1 egg
- 2 Tbsp almond meal
- 1 tsp paprika
- Salt and pepper to taste
- 3 T avocado oil
Servings: pancakes
Instructions
- Shred zucchini and use a towel or paper towel to squeeze as much liquid out as possible
- Put zucchini in mixing bowl and add the rest of ingredients except oil, mix well
- Heat oil in skillet on medium high heat
- Spoon zucchini mix on skillet to make individual patties
- Fry, turning once, until golden brown and crisp, about 5 min
- Drain on paper towel if needed
