Instructions
  1. Shred zucchini and use a towel or paper towel to squeeze as much liquid out as possible
  2. Put zucchini in mixing bowl and add the rest of ingredients except oil, mix well
  3. Heat oil in skillet on medium high heat
  4. Spoon zucchini mix on skillet to make individual patties
  5. Fry, turning once, until golden brown and crisp, about 5 min
  6. Drain on paper towel if needed
