Instructions
  1. Steam broccoli, carrots, and cauliflower for 5-7 minutes (depending on your desired tenderness) adding in peppers for the last 2-3 minutes.
  2. Chop the spinach and parsley.
  3. In a large mixing bowl, toss together cooked quinoa or brown rice, steamed vegetables, spinach and parsley.
  4. Add the seeds and drizzle with lemon juice, oil and salt and pepper to taste.
Recipe Notes

Add 1/2 to 1 lb cooked, diced organic chicken breast for a heartier meal. Serve hot or cold!
