Instructions
  1. In large skillet, heat oil over medium heat.
  2. Add shallot and garlic, cook 2 min.
  3. Add peppers and tomatoes, cook 5 min.
  4. Stir in olives, vinegar, basil, salt and pepper.
  5. Meanwhile, brush fish with oil, season with salt and pepper and broil on greased broiler pan for about 6 minutes or until fish flakes easily.
  6. Serve over sautéed spinach or brown rice.
