Ingredients
- 1 Tbsp coconut or avocado oil
- 1 large shallot chopped
- 3 cloves garlic chopped
- 1 sweet red pepper seeds removed and chopped
- 1 orange pepper seeds removed and chopped
- 1 1/2 cups grape tomatoes
- 1/3 cup kalamata olives sliced
- 3 Tbsp red wine vinegar
- 1/3 c basil leaves torn
- Salt and pepper to taste
- 4 pieces halibut about 6oz ea

Instructions
- In large skillet, heat oil over medium heat.
- Add shallot and garlic, cook 2 min.
- Add peppers and tomatoes, cook 5 min.
- Stir in olives, vinegar, basil, salt and pepper.
- Meanwhile, brush fish with oil, season with salt and pepper and broil on greased broiler pan for about 6 minutes or until fish flakes easily.
- Serve over sautéed spinach or brown rice.
