Ingredients
- 1 cucumber cut into ½ inch slices
- 3/4 pound grape tomatoes halved
- 1/4 red onion thinly sliced
- 3/4 cup kalamata olives pitted and halved
- 2 Tbsp fresh parsley chopped
- 1 avocado pitted and cut into chunks
- 1/2 cup feta cheese broken into large chunks, optional
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 clove garlic peeled and minced
- 1/2 Tbsp oregano
- 1 tsp monk fruit sweetner
- 1/2 tsp each salt & pepper

Instructions
- In a large serving bowl, combine the cucumbers, tomatoes, red onion, kalamata olives and parsley. Place the avocado in a small bowl and set aside.
- In a small bowl, combine the olive oil, red wine vinegar, garlic, oregano, sugar and salt and pepper. Whisk until emulsified. Season to taste.
- Pour the the dressing on the vegetable mixture and toss to coat. Add the avocado and top with chunks of feta cheese.
