  1. In a small bowl, whisk eggs
  2. Heat oil over medium heat
  3. Add onions and cook until translucent
  4. Add mushrooms and spinach and cook for another minute
  5. Stir in eggs and cook all ingredients into a scramble until eggs are done
  6. Season with salt and pepper and sprinkle on chives
