Instructions
  1. Preheat oven to 350 degrees, rub muffin tin with coconut oil
  2. Brown the ground sausage in a medium-sized pan over medium heat or cook bacon
  3. In a large mixing bowl, whisk the eggs and then add in the sausage or bacon, peppers, spinach or kale and pepper
  4. Pour the batter into the muffin tins, filling ¾ of the way
  5. Bake for 20-25 minutes
  6. Allow the muffins to cool for 5 minutes, use a knife to loosen from the sides
