Chicken with Basil, Tomato and Arugula

Instructions
  1. Season chicken with salt and pepper
  2. Heat 2 T of the oil in large skillet over medium-high heat until just shimmering.
  3. Cook chicken on one side for 8-10 minutes until golden-brown then flip and continue to cook on other side another 8-10 minutes, or until done, scraping together any brown bits
  4. As the chicken is cooking: In a medium size bowl, combine tomatoes, basil, garlic, vinegar, 3 Tbs oil and about 1/4 tsp salt and pepper (to taste)
  5. Let the chicken cool a few minutes then slice into 2 inch strips
  6. On a large platter make a bed with the arugula or spinach mixture
  7. Arrange the chicken on top and spoon on the tomato mixture and drizzle the dressing over all
